I know, this is a cooking blog. BUT I have been working a lot of random weird hours the past week or so, and some overtime so there has been very little actual cooking in this house.
To make up for it, I thought I’d post a dessert recipe. The most amazing, delicious, dessert ever. Seriously.
Cheesecake Stuffed Strawberries
2 crates of fresh Strawberries
1 tub Philadelphia ready made cheesecake (You can, of course, make your own cheesecake, but the whole point of this recipe is that it is easy, quick, and delicious)
Start by washing your strawberries and cutting off the tops. Hollow out strawberries (I just use a little knife).
I use a decorating bag with a large tip to fill the strawberries, but if you don’t have those you can just use a ziplock baggie and cut a small hole in one of the corners. So, spoon the cheesecake into whatever bag you are using, and fill strawberries until they overflow slightly.
Finely crush graham crackers into small bowl, and dip the cheesecake top of each strawberry into crumbs.
Finally, melt chocolate chips in double boiler. Spoon melted chocolate into a fresh ziplock bag, cut a small hole in the corner, and drizzle chocolate onto strawberries.
I’ve taken these to a lot of cookouts and parties and they never last very long. They are the perfect, easy dessert.
